This region has gained a great reputation for producing the most sought-after microlots. Edido village is located in the Aricha sub-district of Yirgacheffe town and is located in the Southern Nations and Peoples (SNNP) region, one of the 11 administrative regions of Ethiopia. High altitude, fertile soil, stable and intense rainfall and the superior knowledge of the producers in the region on production techniques are important factors that enable Yirgacheffe coffee to have superior properties. The type of trees that grow wild and specific to the region are the main elements that provide the unique taste of the coffee produced in this region. The coffees of this region have a refined taste, containing high citric acidity, sweet chocolate and floral notes such as lavender, jasmine, bergamot and thyme. Optimally ripe coffee cherries are carefully sorted at the stations where they are sent for the washing process, and after their pulp is removed, they ferment for 36-48 hours, depending on the climatic conditions. After the fermentation process, the coffee beans covered with a parchment layer are washed completely and the beans are classified according to their specific gravity before being dried for 12-15 days in African type sun beds raised above the ground to reach ideal moisture levels. During the day, the coffee beans covered with this parchment layer are periodically turned with rakes to ensure regular and homogeneous drying. The coffees dried on African type beds raised above the ground are covered between 12:00 and 15:00 to protect them from intense sunlight at noon, and this method is also applied at night to protect them from precipitation and high humidity. When the coffee beans reach optimum moisture levels, they are separated from the parchment layer and sent to the factory in Addis Ababa for classification and hand selection in high-tech sortex machines. The highest quality coffee beans that go through all these processes are filled into GrainPro sacks and exported.
